Cherry loaf cake with honey whipped cream
it's officially cherry season & we’ve partnered up with four bakers to create their favorite cherry themed cakes in honor of our new nicotine mint flavor, cherry. 🍒🎂

Ingredients
Cherry Loaf Cake
- 150g olive oil
- 2 large eggs
- 200g sugar, +1 tbsp for topping
- Zest of 1 lemon
- 150g cherry yogurt
- 35g white vinegar
- 1 tsp vanilla
- 250g AP flour
- 1 tsp salt
- 1/2 tsp bp
- 1/2 tsp baking soda
- 1 1/2 cup cherries, pitted
Honey Whipped Cream
- 1 cup heavy cream
- 1 tbsp of honey
- 1 tsp vanilla
Directions
Step 1
Preheat the oven to 350°F. Lightly coat a loaf pan with oil and parchment paper.
Step 2
Pit 1 1/2 cup of cherries. Set aside 10 cherries for topping, then combine the rest of the cherrieswith 1 tablespoon of flour, so they’re lightly coated.
Step 3
Whisk together 250g AP flour, 1 tsp salt, 1/2 tsp baking powder, and 1/2 tsp baking soda in asmall bowl.
Step 4
In a stand mixer, combine 2 large eggs with 200g of sugar and the zest of 1 lemon on high; you can whisk by hand—it’ll just take longer! You’re looking for a pale yellow color and foamy texture.Shut the mixer, add 1 tsp vanilla, 35g white vinegar and 150g cherry yogurt (I used an individual cherry Chobani yogurt), and mix until combined.
Step 5
With your mixer on low, slowly stream in 150g of olive oil. Turn off the mixer, add in the dry ingredients, and combine with a spatula, scraping the bottom as needed. Stop mixing when few streaks of flour are left. Mixture should be thick and fluffy.
Step 6
Add in the 1 cup of floured cherries, and mix until just combined.
Step 7
Pour batter into loaf cake, smoothing the top with a spatula. Add the remaining cherries to the top, and sprinkle with 1 tbsp sugar; granulated sugar works fine; so does brown or demerara.
Step 8
Bake for 1 hour, or until a toothpick inserted into the center comes out clean.
Step 9
While your cake is baking, make the honey whipped cream: in your stand mixer, mix 1 cup of heavy cream with 1 tbsp of honey and 1 tsp of vanilla. Mix until medium peaks.
Step 10
You can simply plop the cream on top, or place into a piping bag to create beautiful fluffy mounds. Top with either fresh cherries, or your favorite cherry jam.
