Cherry pie

it's officially cherry season & we’ve partnered up with four bakers to create their favorite cherry themed cakes in honor of our new nicotine mint flavor, cherry. 🍒🎂⁠

Recipe:

Ingredients

Sourdough pie crust

  • 225 g Cold Butter, diced
  • 60 g vodka
  • 80 g sourdough starter
  • 275 g all purpose flour
  • 10 g salt
  • 50 g sesame seeds

Cherry pie filling

  • 2 cups of fresh cherries
  • 2 cups of frozen sweet cherries
  • 1 tablespoon cornstarch
  • 1 tablespoon Salt
  • 1 cup brown sugar

Garnish

  • 1.5 cup heavy cream
  • 1 vanilla bean pod
  • 1 tablespoon Extra Virgin Olive oil
  • 2 teaspoon Salt
  • 1 cup Powdered sugar

Directions

Step 1

In a small bowl, mix sourdough starter and vodka, set aside. 

Step 2

In a medium bowl, combine salt, flour, and toasted sesame seeds. 

Step 3

Once combined, cut in cold butter until the small dices of butter are covered and squish them with fingers. Gradually stir in sourdough/vodka mixture. 

Step 4

Start kneading once all liquid is added and continue until it is one cohesive mass. 

Step 5

Wrap tightly in plastic wrap and chill in the fridge for two hours minimum. 

Step 6

Divide the dough in half, and freeze one half (or make two pies), and roll the remaining half out. 

Step 7

Dust counter space with flour and roll out the dough, until it will fill a pie shell. 

Step 8

Work fast so the dough remains cold and delicately transfer pie dough to a pie shell, add a crumpled sheet of parchment filled with pie weights or dried beans to the shell, and bake at 400 F for 15 minutes, remove parchment and lower temperature to 325 F and bake another 15-20 minutes or until pie crust it baked thoroughly. 

Step 9

While the pie crust is cooling, take 2 cups of fresh cherries and remove their pits, set aside.

Step 10

Combine the frozen cherries, cornstarch, salt and brown sugar to a small saucepan, and stir until combined over medium/high heat. 

Step 11

Once the mixture has thickened, remove from heat.

Step 12

Take the fresh cherries and add to the bottom of the pie crust, top with the warm cherry mixture and place in the fridge to chill. 

Step 13

Once the pie has cooled, begin making the garnish. 

Step 14

Using a mixer, add heavy cream, vanilla bean, salt and powdered sugar, whip until thick whipped cream forms. 

Step 15

Add this to the top of the cooled pie. 

Step 16

Add an additional drizzle of olive oil and any remaining toasted sesame seeds.
